Tarragon Turkey MedallionsA Recipe from American Heart Association Low Salt Cookbook, 3rd Edition Preparation of this entrée is very fast paced, so have your side dishes ready before you begin cooking it. Mixed salad greens topped with Cider Vinaigrette and Rice and Vegetable Pilaf make good accompaniments.Ingredients:• 2 tablespoons fresh lemon juice • 2 tablespoons water• 1-1/2 teaspoons fresh tarragon leaves or 1⁄2 teaspoon dried, crumbled• 1 medium garlic clove, minced• 1/4 teaspoon salt• 1/8 teaspoon pepper• 1-pound turkey tenderloin, all visible fat discarded• Vegetable oil spray• 2 teaspoons olive oilServes 4(3 ounces turkey per serving)To Prepare:In a small bowl, whisk together the sauce ingredients. Set aside.Cut the turkey crosswise into 1/4-inch slices.Lightly spray a large nonstick skillet with vegetable oil spray. Heat over high heat. Add the oil and swirl to coat the bottom. Cook the turkey slices in a single layer for 2 minutes. Turn the turkey and cook for 3 minutes, or until no longer pink in the center. Transfer the turkey to a serving plate.Pour the sauce mixture into the skillet. My mother was recently hospitalized with heart failure, and is now limited to 2000mg/day of sodium. Having eschewed processed foods many years ago - I rarely buy can, box, or bag - I was absolutely stunned by the amount of sodium in nearly everything at the grocery as I was grasping for meal ideas for her (and her traditional Southern salt/pepper taste buds.) I've now made numerous items from this cookbook for her, and she has loved every dish. Try the pork loin with apple dressing, it's worthy for Sunday company. The meat loaf is also incredible.Additional tips: Invest in many, varied spices and fresh herbs, a good balsamic vinegar, and keep a bowl of fresh lemons on the table. There IS life after salt!

We spent over $70 just ordering low-salt cookbooks for my mother's Christmas gift as she was recently put on a restricted salt diet.. Out of the three we ordered, only one was "fairly" good. In the mean time, she ordered this one for herself and shared it with our family. I was stunned !! the recipes are all ingredients we have on hand or are easily accessible at "any" grocery store, as well as cheap to purchase. The recipes are not over the top time consuming and gourmet, making it easy for almost any level of cooking experience easy to do and for those whom are busy.. The serving sizes were shocking compared to the cookbooks we ordered for her, there was ample servings while still maintaining a low-salt diet. The carbs for those who are watching that and potassium were low as well. Truly its more than just a cookbook for low-salt diets. Our family will be incorporating many of the recipes from this book. The price is very reasonable, especially considering the price we paid for the cookbooks we ordered her that were truly a disappointment, time consuming and many of the ing. were difficult or expensive to get. We HIGHLY RECOMMEND PURCHASING THIS !!

I've ordered several low sodium cookbooks after my husband was put on a low sodium diet. This one has some of the best recipes of all.

Purchased for my mother in law after open hear surgery. She's not a cook and hates to follow directions. this book she loves because it is easy to follow and gives her ideas on meals and replacement of salt.

I got this so I could provide proper food for my Mom after she had a heart attack. I was skeptical at first that there would be anything worth making or that it would taste good. I was wrong on both accounts. We have made a few different things from it so far and all have been very good. Some have even become a new family favorite. Was a very helpful book to have.
